
CØLIBRÍ RED
The wine has a ruby color with purple shades. The nose is an enticing mix of red berries, such as raspberries and cherries. On the palate, it delivers a symphony of flavors reminiscent of a classic red wine. Juicy red fruit flavors, complemented with spiciness. The tannins are well integrated, providing structure and a velvety and engaging mouthfeel.
Our wines are produced in Friuli Venezia Giulia, located in the far northeast corner of Italy, bounded by the borders with Austria and Slovenia to the north and east respectively. The most important viticultural influence given by the region's topography is its position between the Alps and the Adriatic Sea, alternating both a Mediterranean and an alpine continental climate.
Cølibrì RED is crafted with grapes from our own vineyards, cultivated organically and in the most sustainable way possible. We implement techniques such as green manure but also enhance biodiversity using beneficial insects and solar panels for producing most of the energy supply needed
GRAPES: 100% Merlot Khorus (PIWI varitiety)
SOIL: Alluvial gravel soil with loam
VINIFICATION: Spontaneously fermented in stainless steel tanks and then aged in barrels for 6 months. Afterward, alcohol is gently dealcoholized using the membrane technique
FOOD PAIRING: It pairs well with a variety of dishes, such as roasted vegetables, grilled portobello mushrooms, or a hearty lentil stew. Its versatility makes it a great choice for pairing with vegetarian or meat-based meals
