
CØLIBRÍ WHITE
The wine has a pale straw-yellow color. The bouquet is a mild and harmonious perfume of citrus and ripe stone fruits accompanied by a delicate minerality that adds depth. On the palate, it’s light and complex at the same time, with a slight floral character and yeast-related aromas that enrich the mouthfeel and leave a pleasant and long aftertaste.
Our wines are produced in Friuli Venezia Giulia, located in the far northeast corner of Italy, bounded by the borders with Austria and Slovenia to the north and east respectively. The most important viticultural influence given by the region's topography is its position between the Alps and the Adriatic Sea, alternating both a Mediterranean and an alpine continental climate.
Cølibrì WHITE is crafted with grapes from our own vineyards, cultivated organically and in the most sustainable way possible. We implement techniques such as green manure but also enhance biodiversity using beneficial insects and solar panels for producing most of the energy supply needed
GRAPES: 100% Traminer
SOIL: Alluvial gravel soil with loam
VINIFICATION: Spontaneously fermented in stainless steel tanks in contact with the yeasts for 6 months. Afterward, alcohol is gently dealcoholized using the membrane technique
FOOD PAIRING: It pairs well with light and fresh dishes, such as shrimp salad, grilled sea bass, or a goat cheese and arugula salad. Its versatility makes it an ideal companion for appetizers and light meals
